Day 2. Along with all the great demonstrations and techniques being shared at the ICC, there is also a 3 day pastry competition. I have been asked to be the head judge. Yesterday I had to taste 20 desserts. 10 advanced to today and we tasted 10 more this morning. Of those 10, 3 advance to the finals tomorrow. I will post a couple pics

Star hefs ICC starts today!

I am so excited. I am the executive pastry chef of the starchefs International Chefs Congress this year. It is the first year they are doing a three day pastry competition. Some serious pastry chefs coming from all over the country! Plus I am teaming up with by friends Giuseppe and Richie from Painkiller and Dutch Kills to do a mixology workshop called ISLAND REVOLUTION combining both our worlds!
